The Restaurant

This is a beautiful, Brand new, high-end Japanese restaurant in Sydney CBD. Operating 7 days a week, this offers a great work life balance and late starts. This restaurant is part of a growing and reputable hospitality group.

Easily accessible through public transport and some nearby parking.

The Role
   
You will need to be an experienced Snr Sous/Head chef with a Japanese background in cooking at least 4 years in a role like this or similar.
Michelin or Hatted Experience in Japanese Cuisine, and exposure to Sushi and sashimi methods is preferred!

You will have a small team working under you managing daily preparation and service with you.

Ideally you will have extensive knowledge of all Japanese ingredients and techniques.  You’ll also be involved in developing and testing new dishes with the seasonal changes. Experience with  Yakitori / Bar snacks + ala carte preferred.

The role is responsible for monitoring inventory and cost of goods along with managing a medium sized kitchen team and labour costs. Roughly 12-14 chefs on the roster total and up to 6 or 7 chefs on for a busy service.
