The Venue

This is a well-known and popular venue in South West Sydney. The venue has plenty of regulars who are locals.  It seats about 150 pax for breakfast, and this will double around 200-250 pax on a busy day.  They are open for breakfast, lunch and dinner. There is a separate breakfast team to run this service. The Junior Sous Chef will more be looking after lunch and dinner shifts. During these shifts, you can be doing 500-700 covers on a busy day.

The Team and Set Up

It has a large kitchen team of approx. 25-30 full-time and casual chefs. The restaurant serves fairly upmarket bistro fare with some more creative and interesting specials, but there certainly is room to play with the specials and other offerings.

The Role

The role itself is certainly a hands-on cooking role. They are particularly looking for someone who is passionate about food and thrives on being busy. The junior sous chef shall be running the day-to-day operations, and the responsibilities include but are not limited to the following:

  • Hands-on cooking
  • Work with the Chef on special and ideas
  • Learning some of the Ordering and Pass management
  • Working across all sections to know how the kitchen runs efficiently

The Hours

The hours are usually 40-42 hrs per week.

It is a 5-day roster. The busy shifts are on the weekends so you would be required to make sure they are covered.

The Right Candidate

They prefer a chef coming from a busy volume restaurant or club background. The client is ideally seeking a chef with a stable background of a minimum of 1 or 2 year stays in the last couple of roles and a switched on chef. Also,

  • Someone that loves being busy and thrives on the rush of service.
  • Has an upbeat personality and likes to have fun at work.
  • Comfortable multi-tasking during service and prep.
  • Passionate about being a chef, possess strong communication skills and a commitment to high standards.

Salary is up to $80K+Super.
